The number represents how many times you need to shoot them with the balls in order to eliminate them from the screen, as you have to get rid of all of them in order to pass a level. Also, after each shot you make, they are moving down a little bit.

Make sure to prevent all the bricks from reaching the bottom, or you lose the game and have to start again from that level. You are going to use the mouse to aim and shoot the ball. The bricks will drop fruits after eliminating them, and they represent your score, so try to get a score as big as possible!
