At each level, you have a number of points you need to reach in order to pass it, and if you do so, you are going to get three stars in return. The stars are also awarded based upon how fast you are in clearing a level, because you have a limited number of moves allowed to reach your goal, so always get to it without wasting too many moves.

The jewels on the screen come in different shapes as well as colors, and you will use the mouse to swap two adjacent ones with one another, with the goal of forming a row of three or more identical ones, either horizontally or vertically, and upon doing so you are going to eliminate those jewels and get points in return.
